Tandoori Marinade
Makes 1 cup

For roasted or grilled chicken or pork or as seasoning for meatballs.

Ingredients

1 tbs. Tandoori Spice mix
½ tsp. Garam Masala
½ tsp. curry powder
½ tsp. ground cinnamon
1 tsp. Dijon mustard
¼ cup pomegranate molasses or regular molasses mixed with 2 tbs. cranberry juice and 1 tbs. Balsamic vinegar
¾ cup chicken stock

Procedure

  1. Mix all ingredients in a small saucepan or microwave safe bowl. Heat to a low simmer and cook for 3-4 minutes. Remove from heat and cool before pouring over chicken or pork as a marinade.
  2. Grill or oven roast chicken or pork. When it is done, add the remaining marinade either to the cooking pan or heat it in a pan and cook until it is reduced, and then pour it over the cooked meat or poultry.
  3. For meatball seasoning, substitute 1/4 cup water for chicken stock. Add to ground meat as a seasoning.
