Sliced meatloaf heated in the microwave for 1 minute makes the sandwich even better.
2 slices (½ ” thick) fresh crusty artisan bread
Mayonnaise, preferably homemade
Dill Pickle relish, thoroughly drained
Leftover meatloaf sliced ½“ thick, enough to cover a slice of bread
Lettuce (or watercress or arugula)
- Put a thin layer of mayonnaise on each slice of bread. Add mustard to bottom slice and horseradish and relish to the top slice.
- Put meatloaf on bottom slice with greens on top. Place top slice on greens and eat.
