Meatloaf Sandwich


Sliced meatloaf heated in the microwave for 1 minute makes the sandwich even better.


2 slices (½ ” thick) fresh crusty artisan bread
Mayonnaise, preferably homemade
Dijon mustard
Creamy horseradish
Dill Pickle relish, thoroughly drained
Leftover meatloaf sliced ½“ thick, enough to cover a slice of bread
Lettuce (or watercress or arugula)


  1. Put a thin layer of mayonnaise on each slice of bread. Add mustard to bottom slice and horseradish and relish to the top slice.
  2. Put meatloaf on bottom slice with greens on top. Place top slice on greens and eat.
