Short Ribs With Spicy Ginger Barbecue Sauce

  1. The short ribs have been par cooked with onion just as the chicken thighs were.

    Par Cooked Short Ribs

This recipe assumes you have bottled barbecue sauce and preserved ginger in your refrigerator (If you don’t, I recommend that you do. Great flavors to add to lots of things.).

Ingredients

2 or 3 (depending upon their size and your appetite) par cooked short ribs with onion, garlic and juices cooked with them, thawed
½ medium, raw yellow onion, peeled and chopped
2 cloves raw fresh garlic, chopped
¾ cup barbecue sauce (a brand that is tasty but not too sweet)
2 tbs. fresh grated or preserved chopped ginger
3 tbs. cider vinegar
2 tbs. finely chopped fresh sage leaves (from my herb garden)
Hot sauce to taste

Procedure

  1. Put par cooked ribs and cooking drippings in skillet. Cook over medium heat until the drippings liquefy. Remove ribs and set aside.
  2. Add fresh onion and other remaining ingredients to skillet, stir to mix and cook over medium heat for about a minute. Return ribs to the pan, cover and cook for 10 more minutes or until ribs are done.
  3. While ribs are cooking, preheat oven broiler or outside grill. When the ribs are cooked, transfer them to a broiler pan or the barbecue and cook until they become crisp and charred.
  4. These are great served with red beans and rice and coleslaw.
