After I made a batch of olive and pimento cheese, I started to get feedback from my husband and kids. So far it has gotten good reviews when used on bagels, bagels with smoked salmon, a leftover steak sandwich, crackers, and celery sticks. That’s all good, but it can’t beat my personal favorite, the olive and pimento cheese sandwich with heirloom tomato and fresh, crispy lettuce.

I love putting a lot of lettuce on my sandwiches. It’s a good way to eat more greens.

Olive and Pimento Cheese Sandwich with Heirloom Tomato

Ingredients

2 slices fresh white bread of your choice
About 2 tbsp homemade olive and pimento cheese (or more if you like!)
2 or 3 slices heirloom tomato
Crispy, fresh green lettuce such as green leaf
Salt and pepper to taste

Procedure

  1. Spread about 1 tbsp of olive and pimento cheese on each slice of bread
  2. Layer on the sliced tomato; salt and pepper the tomato to your taste
  3. Add the lettuce
  4. Slice and serve!
