Dijon Vinaigrette
Dijon Vinaigrette
Serves 2 Salad Portions
Ingredients
2 tbs. white wine vinegar
1 tsp. Dijon mustard
1 small pinch granulated sugar (less than 1/8 tsp.)
½ tsp. Herbs de Provence or ¼ tsp. chopped fresh tarragon
3 tbs. extra virgin olive oil
Freshly ground salt and pepper to taste
Procedure
- Whisk together all ingredients except salt and pepper. When mixture is emulsified, taste and add salt and pepper to suit your taste.
- Drizzle over salad greens and serve immediately.
