Corn Fritters with Green Sauce<\/strong>

More like beignets than classic fritters, these crunchy, zippy tasting wonders show off the sweetness of fresh corn and make fabulous hors d\u2018oeuvres or side complements to grilled seafood, poultry or meat. \u00a0Pair with Chorizo Empanadas<\/a>for a great hot weather taste combination.<\/p>\n

Ingredients<\/span><\/p>\n

5 ears fresh corn, husks removed and kernels cut from cobs
\n\u00bd cup corn juice
\n1 pinch granulated sugar
\n\u00bd cup minced fresh cilantro
\n2 tbs. minced fresh mint
\n\u00bc cup minced red onion
\nJuice from 1 small or \u00bd large fresh lime
\n2 tbs. Salsa Verde (medium heat)
\nGreen Tabasco Sauce to taste
\n1 egg, beaten with whisk or fork
\n\u00bd cup all purpose flour
\n\u00bc cup cornmeal (not polenta)
\n1 tsp. baking powder
\nCanola oil for frying<\/p>\n

Green Sauce<\/strong><\/p>\n

Fresh, spicy green sauce<\/p><\/div>\n

2 tbs. Salsa Verde
\n2 tbs. minced fresh cilantro
\nJuice from 1 small or \u00bd large fresh lime
\nGreen Tabasco to taste<\/p>\n

Procedure<\/span><\/p>\n

    \n
  1. Put 1 cup corn kernels in a medium size mixing bowl. Set aside.<\/li>\n
  2. Process remaining kernels until they are pureed. Strain through a fine sieve into a measuring cup or small bowl.\n
  3. Add cilantro, mint, onion, lime juice and salsa verde. Mix together. Add Green Tabasco to taste. Mix in beaten egg.<\/li>\n
  4. Mix dry ingredients together and then mix into the other mixed ingredients. Set batter aside. The batter should be able to drop easily rather then pour from a spoon. Add more liquid or flour to correct the consistency.<\/li>\n
  5. Make Green Sauce and set it aside.<\/li>\n
  6. Pour enough oil in a heavy fry pan to reach 1\u201d height. Heat over medium heat until a drop of batter bubbles immediately but does not smoke. Drop about 2 tbs. batter into oil for each fritter. Fill the pan but don\u2019t let the fritters touch. Turn each fritter when the bottom is browned, about 1\u00bd minutes. Remove with slotted spoon to drain on paper towel covered pan or plate. Keep warm in 250\u201d oven until all fritters are cooked.<\/li>\n
