Ingredients<\/span><\/p>\n2 oz. shredded beef suet
\n2 tart apples, cored and chopped with skin on
\n6 oz. dried small black currants
\n6 oz. golden raisins
\n6 oz. raisins
\n4 oz. dried plums with citrus
\n2 tsp. fresh orange zest, chopped
\n2 tsp. fresh lemon zest, chopped
\nJuice of 1 lemon
\n\u00bd cup brown sugar
\n\u00bc cup candied ginger, chopped
\n\u00bd cup slivered almonds
\n\u00bd tsp. each: ground nutmeg, allspice and cardamom
\n\u00bc cup brandy or dark rum<\/p>\n
Procedure<\/span><\/p>\n\n- Mix all ingredients except brandy in a non-reactive bowl. Cover with plastic wrap and refrigerate for 24 hours or up to 3 days.<\/li>\n
- Transfer to a non-metal casserole dish, cover and bake at 225\u00ba for 2 hours. Remove and cool to room temperature, covered. Stir in the brandy and use as pie or tart filling or transfer to a glass or plastic container and refrigerate for up to 3 weeks. It also may be frozen for up to 6 months.<\/li>\n
