Fresh Tomato Sauce<\/strong>
\nMakes about 2 cups<\/p>\n

Inspiration<\/span><\/p>\n

This is a very light sauce that complements seafood and pasta, especially ravioli and tortellini.<\/p>\n

Ingredients<\/span><\/p>\n

1\/3 cup extra virgin olive oil
\n3 cloves garlic, thinly sliced or minced
\n2 cups ripe, coarsely chopped tomatoes*
\n1\/2 cup chopped fresh basil
\n1\/2 tsp. crushed red pepper flakes
\n1\/4 cup tomato puree
\nkosher salt to taste<\/p>\n

Procedure<\/span><\/p>\n

    \n
  1. Put oil and garlic in a saucepan over medium low heat, and cook garlic until it softens and releases acid (3 minutes).<\/li>\n
  2. Add tomatoes, basil, peppers and puree and simmer for 5 minutes.<\/li>\n<\/ol>\n
    *Note the following changes for canning:<\/div>\n
    Omit olive oil, garlic and fresh basil if you are not using pressurized, immersion canning. Those ingredients can be added when you use the canned sauce.<\/div>\n
