After I made a batch of olive and pimento cheese, I started to get feedback from my husband and kids. So far it has gotten good reviews when used on bagels, bagels with smoked salmon, a leftover steak sandwich, crackers, and celery sticks. That’s all good, but it can’t beat my personal favorite, the olive and pimento cheese sandwich with heirloom tomato and fresh, crispy lettuce.<\/p>\n

I love putting a lot<\/em> of lettuce on my sandwiches. It’s a good way to eat more greens.<\/p>\n

Olive and Pimento Cheese Sandwich with Heirloom Tomato<\/strong><\/p>\n
Ingredients<\/span><\/p>\n
2 slices fresh white bread of your choice
\nAbout 2 tbsp homemade olive and pimento cheese<\/a> (or more if you like!)
\n2 or 3 slices heirloom tomato
\nCrispy, fresh green lettuce such as green leaf
\nSalt and pepper to taste<\/p>\n
Procedure<\/span><\/p>\n
\n
Spread about 1 tbsp of olive and pimento cheese on each slice of bread<\/li>\n
Layer on the sliced tomato; salt and pepper the tomato to your taste<\/li>\n
Add the lettuce<\/li>\n
