The Simplest and Best Spring Vinaigrette

Spring Lettuce

Inspiration

From spring through early summer, all varieties of lettuce except chicory (radicchio) have sweet, very subtle flavors that easily are overpowered by full flavored vinaigrettes. I learned this recipe from a young chef who worked the salad line at an Italian trattoria, where it was developed specifically to protect the flavors of young lettuce.

Ingredients

Juice of ½ fresh lemon
¼ cup extra virgin olive oil
Salt and freshly ground black pepper to taste

Procedure

  1. Wash, dry and tear into bite size pieces enough lettuce for two salads
  2. Squeeze lemon juice through a strainer onto the greens
  3. Drizzle with oil
  4. Sprinkle with salt and pepper to taste
  5. Toss salad and serve
