Sonoma Jack Quesadillas

Though not a traditional menu choice, these are great served with Posole.

Ingredients

6-8 5” flour tortillas
4oz. aged Sonoma Jack cheese
4 tbs. Green Tabasco
Canola oil for frying

Procedure

Rub the edge of each tortilla with a little water. Grate cheese over half of each flour tortilla. Sprinkle with 1 tsp. Green Tabasco. Fold tortillas over so round edges meet. Heat oil in large fry pan. Put folded tortillas in pan and cook until golden brown, pressing the round edge to seal. Turn over and cook other side similarly. Remove from pan and cut each half into 2 wedges. Keep warm in 200º oven until ready to serve (not more than 5 or 6 minutes).
