Makes about 1 cup
The dark honey and pickled capers offset rhubarb to make this savory relish complement pork chops, country style pork spareribs or wild poultry. Another way for fruity, tart rhubarb to shine.
The honey needs to be dark and richly flavored. If the brand you have on hand is light yellow, add a drop or two of molasses to it.
1/3 cup fresh basil, finely chopped
1 tbs. chopped shallot
3 tbs. capers
1large clove garlic, chopped
¼ cup fresh lemon juice
2 tbs. dark honey
1 tbs. Canola oil
¾ cup chopped rhubarb
- Combine 1-7 ingredients in mixing bowl. Set aside.
- Heat oil in skillet. Add rhubarb. Cook 5 minutes, moving chunks around.
- Remove pan from heat and cool rhubarb to room temperature. Add cooled rhubarb to other ingredients. Mix with a fork.
