Dijon Vinaigrette
Serves 2 Salad Portions

Ingredients

2 tbs. white wine vinegar
1 tsp. Dijon mustard
1 small pinch granulated sugar (less than 1/8 tsp.)
½ tsp. Herbs de Provence or ¼ tsp. chopped fresh tarragon
3 tbs. extra virgin olive oil
Freshly ground salt and pepper to taste

Procedure

  1. Whisk together all ingredients except salt and pepper. When mixture is emulsified, taste and add salt and pepper to suit your taste.
  2. Drizzle over salad greens and serve immediately.
