Mexican Sauce
Makes 1 pint

Ingredients

3 tbs. Mexican Spice
1 tsp. salt
1 clove fresh garlic, peeled and minced
½ cup chopped yellow onion
3 fresh tomatoes, chopped and drained (save juice)
¼ cup lime juice
1 tbs. cider vinegar (or rice or white wine)
2 tbs. Green Tabasco sauce
2 tbs. Green tomatilla sauce or canned tomatilla
Hot chili sauce to taste
¼ cup finely chopped cilantro

Procedure

Combine all ingredients in a bowl. Let flavors set up for 5-6 minutes. Add chopped fresh mild Anaheim or Poblano pepper if you want to. Use as a sauce inside Tacos, Fajitas, Quesadillas or Empanadas.
