Soy Ginger Sauce
Makes 1 cup

Ingredients

½ cup soy sauce
2 tbs. unseasoned Rice Vinegar
1 tsp. granulated sugar
1 tsp. minced garlic
2 tsp. minced ginger
2 tbs. lime juice
1 tsp. toasted sesame oil
¼ tsp. hot chili sauce
1 stem green onion, white and green, sliced on diagonal
2 tbs. minced fresh cilantro
2 tbs. toasted sesame seeds

Procedure

Mix all ingredients except onion, cilantro and sesame seeds in a small bowl. Transfer to a small saucepan or microwave safe container. Heat until barely simmering. Remove from heat, add onion and let flavors set up for about 5 minutes. Pour over cooked meat, fish or poultry or vermicelli. Garnish with cilantro and sesame seeds.
